A tale from my dinner last night.

Once upon a time, there lived a little cheeseburger. This cheeseburger was no ordinary cheeseburger. Its patty was made from turkey, its bun was an English muffin, and it was topped with sautéed poblano chili peppers, mushrooms, scallions, garlic, basil, and cheeeeeeese.

This little burger made a home next to some baked sweet potato fries. But sadly, it did not last long in this world, as it was a very, very, delicious cheeseburger.


  • 2 extra lean turkey burgers (I buy Jennie-O 95/5 Turkey Burgers and leave them in the freezer)
  • 2 tsp. olive oil
  • 1 poblano chili pepper, sliced
  • 1 cup sliced mushrooms
  • A little diced scallion
  • A little diced garlic
  • A dash of salt and pepper
  • A handful of chopped basil
  • 2 slices of American cheese
  • 2 tbsp. of canola mayonnaise
  • 2 English muffins
  • 2 cups of frozen sweet potato fries


Preheat oven to 400 degrees. Bake sweet potato fries on a cookie sheet for 15-20 minutes, making sure to turn once. Over medium heat, cook turkey burgers in a large skillet for 4-5 minutes on each side.

Heat olive oil in medium skillet and sauté peppers, scallions, and garlic. After the peppers have browned, add mushrooms. Season to taste. Cook mushrooms until they soften. Add basil and remove from heat.

Toast English muffins. Spread 1 tbsp. of mayonnaise on each muffin. Layer your burger on top of the side with mayonnaise, then place cheese on top of burger. Make sure to melt the cheese a little in your toaster oven or under the broiler for a few seconds.

Top each burger with some of your sautéed pepper mixture. Don’t forget to take your sweet potato fries out of the oven and enjoy!
